Stir-Fry in a New York Minute

For many of us, fall weekends are usually packed; we leave early in the morning, do all those fall activities that we love (and miss during the rest of the year), and get home pooped. Who wants to make dinner? And who has the time to make dinner the night before?! We’re too busy unpacking the diaper bag, giving the kids a bath and getting ready for the bedtime routine to have the time and energy to cook a meal. And so, another night of frozen pizza beckons us. Those are the times even your kids turn away and say “Pizza again???”

Not to worry: here’s a plan to get a great meal on your table in no time. The trick is very simple – in the morning, before you leave the house, cook some spaghetti. It can cook while you’re getting yourself, your kids, and in some cases, even your husband ready. By the time you’re ready to leave the house the spaghetti will be ready and you can refrigerate it and not worry about it until you get home.  When you get home, just follow this super-simple recipe and enjoy a healthy dinner with your family.

Stir-Fry in a New York Minute

Ingredients:

1 package whole-wheat spaghetti or linguini (or Gluten-free spaghetti)
2 packs microwavable frozen vegetable mix
2 tablespoons canola oil
3/4 bottle Teriyaki sauce
4 packets Stevia (or a few teaspoons of honey)

Directions:

Cook the spaghetti according to instructions. Set aside (or refrigerate).

Microwave the frozen vegetables bags. I use two Birds Eye Steamfresh 12 oz. bags that include broccoli, carrots, sugar snap peas and water chestnuts, but feel free to use any mix you like, as long as it can be steamed in the microwave. The Birds Eye bags take 5.5 minutes each. You can also use bigger packages, if you want more veggies.

When the veggies are ready heat up a wok, spray with cooking spray and add the canola oil. Add the veggies and the Teriyaki sauce.Stir for about a minute.

Add the pasta. Stir for about a minute and remove from heat. Add stevia (or honey, if you’re not watching your carbs/sugars).

Note: Feel free to add more veggies: you can stir-fry extra veggies while the frozen ones are in the microwave. For example, I sometimes stir-fry canned water chestnuts before adding the veggie mix.
